Tomato vegetable pulao is a delicious recipe served as a Main. It is an easy to cook and full of veggies and spices. This yummy recipe can cook anytime. This pulao goes well with pickle, chutney, curd, raita. It can be lunchbox recipe for your kids.
Tomato Pulao Ingredients:
- 1 tbsp clarified butter
- 1 bay leaf
- 5 small cloves
- 1 star anise
- 1 tbsp ginger and garlic paste
- 1 inch cinnamon stick
- 10 whole cashews, make it halved
- 1 medium sized onion, finely sliced
- 2 medium sized tomato, finely chopped
- 1 small potato, cubed
- 1 green chili cut lengthwise
- 5 beans, chopped
- ½ carrot, chopped
- ¼ cup green fresh peas
- ¼ tsp turmeric
- ½ tsp Kashmiri red chili powder
- 2 tbsp coriander leaves, finely chopped
- 2 tbsp mint leaves, finely chopped
- 1 cup basmati rice soaked 20 minutes before
- 5 cup water
- Salt to taste
Tomato Pulao Directions:
1Firstly, heat ghee and saute spices, cashews in a pressure cooker.
2Similarly add onions and saute well.
3Also, add ginger garlic paste and chili. Again saute well.
4Now add chopped tomatoes and saute well.
5Further add any mixed vegetables of your choice that are easily available at home.
6Sauté the veggies for next 2 minutes.
7Now Mix red chili powder, turmeric, salt, coriander leaves and mint leaves. Go for more 2 minutes saute.
8Now add basmati rice which is soaked for 20 minutes before.
9More add one and half cups of water and give a decent mix to whole in pressure cooker.
10Now it’s time to cover pressure-cooker at least till 2 whistles on medium flame.
11Lastly, tomato vegetable pulao is ready to serve with raita. Garnish with tomato slices and coriander leaves. You can enjoy it with coriander – mint chutney.
